There really isn’t anything better than
being a wine-lover and sitting down to a professionally prepared
gourmet meal and tasting one or more wines with each
course. The beautiful marriage of food and wine
enhances any dining experience…and you might be surprised to
see just how much fun the table talk is when multiple wines are
tasted with each course. Which wine is the best
by itself and which is best with the food? Of
course, in this case there are no ultimate right answers…we
like to say that ‘the beauty is in the mouth of the
beholder!’ In 2011, each wine dinner has
had all of the wines selected and their food pairing matched
through close contact between Sommelier and
Chef. What could be better?

This gorgeous Shediac mansion is celebrating

MacAdam wants to mark the occasion with some culinary
fireworks.
Sommelier Bill Vance has worked with Chris on many outstanding food
and wine collaborations and is very excited by the wines selected
for the 2011 Prestige tasting.
Working closely together, these two food and wine lovers promise to
knock your wine-soaked socks off again this
year. How can you go wrong…a multi-
course meal prepared by one of the regions top Chefs…with
each course paired with 2 to 4 of some of the Wine Expo’s
highest rated and most expensive wines…13 different wines in
total! This winning combination explains why
this dinner sells out so quickly. Buy your
tickets early to avoid disappointment.

Pastalli Restaurant — Moncton, NB
Wednesday, November 2nd — 6:30 PM
Pastalli’s Restaurant has a well-earned
reputation for creating delicious and unique ‘one-off’
menus at previous Expo wine dinners. That and
the delicious wine pairings help explain why these dinners always
sell-out so quickly. Such is the passion of
owner Gilles Ratté and Sommelier Bill
Vance. For 2011, Gilles has once again
enthusiastically embraced the Wine Expo, but this year his dinner
will be very different.
We can’t say to much just yet, but there
is a Food Network star rumoured to be attending.
And Gilles will be using this person’s newest cookbook as
inspiration for a fabulous evening of food and wine in support of
the Frye Festival.
We will be posting more details about this very
popular, award winning TV personality and the proposed menu as soon
as all details are finalized. But if
you’re a fan of Food Network TV, you probably won’t
want to miss the opportunity to meet and greet…and be one of
the first people to receive a signed copy of this star's latest literary offering.
So mark your calendar
and join restaurateur Gilles Ratté and Sommelier Bill Vance
on a delicious journey through France…all in support of
Moncton’s nationally recognized Frye Festival.
The menu and wine list are posted here...

‘A Family Passion for
Wine’ dinner
$75 including all
taxes & gratuities
Petit Cavalier Restaurant, Moncton, NB
Thursday, November 3rd — 7 PM
This dinner is another stunning combination of
passionate wine making and a passionate Chef.
California’s Hope family is responsible for an incredible line-up
of very high quality wine and they are represented in Canada by
Meliza Jalbert…a stunning presence in her own
right. Meliza combines deep knowledge with a
playful presentation style that as sure to educate as it is to
entertain. And did we mention that the wines are
incredible?
Combine this dynamic liquid offering with the
talented creations of Chef Roger LeBlanc and you’ve got one
exceptional evening of food and wine. Roger, the Chef and owner of
Petit Cavalier, spent most of his culinary life on the west coast,
so his style and creative sensibility should be a perfect match for
these large California wines.
Ms. Jalbert and Chef Roger are very comfortable
in both languages, and they will be pleased to answer any question
you might have. So why not join them for a great
night out. The tickets for this dinner are very
